2 pc Eggs ( Original base amount: 2 pc, Original Measure: PIECE )
1 ml Salt ( Original base amount: 1 ml, Original Measure: solid )
25 ml Water ( Original base amount: 25 ml, Original Measure: fluid )
100 gr Flour ( Original base amount: 100 gr, Original Measure: solid )
1 pc Egg-yolk ( Original base amount: 1 pc, Original Measure: PIECE )
2 ml Mustard powder ( Original base amount: 2 ml, Original Measure: FLUID )
2 ml Cayenne pepper ( Original base amount: 2 ml, Original Measure: FLUID )
50 gr Cheese ( Original base amount: 50 gr, Original Measure: SOLID )

  1. Preheat the over to 220°C. Cook the butter, water and the salt in a pan.

  2. Sieve the flour on a piece grease-proof paper and pour it into the boiling mixture. Stir it quickly.

  3. Beat the mixture with a spoon till a thick mass. Turn off the heat.

  4. Stir first the egg-yolk and second the eggs to the mass. After that add the mustard powder, cayenne pepper and the cheese to it.

  5. Scoop teaspoons with the mixture on a grease-proof baking sheet and bake the balls 10 minutes. Bring the temperature back to 180°C en bake them another 15 minutes till they are brown. Serve immediately or let them cool down on a rack till they are cold.
